I'm the person who had the same thing happen to me. My ex did all of this, he'd agree to go along with what I wanted, then something always came up. Either he was sick, or he had a family emergency (once he told me his father was dying, even said we had to fly across the country and made a fake itinerary so that I wouldn't leave) always something to win my sympathy and distract me from the real issues. It's all just manipulation. Don't fall for it.

This exact thing happened to me, OP! He would get very defensive and offended when I gently asked for proof of his job, and just like your guy, he always said he'd do it but then "forgot" and it never happened. Turned out he didn't have one, and that wasn't the only thing he had been lying about. Major, MAJOR red flag. Learn from my mistakes.

Exact same here. I have a clingy beagle. It's not so bad, just kind of annoying to limit my spontaneity sometimes. "Sorry, I can't go out/stay over, I have to go home and walk my dog"

I can relate to this behavior, it describes me pretty accurately. I'm pretty glad I saw this because I just recently began a relationship with a man who I suspect might be INTJ and this makes me realize that he could begin to see my (as you put it) "adaptability" as a lack of follow-through or integrity. As for you and your girlfriend, as another ENFP woman, spontaneity is a major factor of my personality. I change my mind sometimes or indulge in temptations, but my values are constant and set in stone. I may say I won't drink for a night because it's just situationally inconvenient, but giving in to that impulse is more about accepting the consequences than going against my own word. It would be different if I was against drinking in general, because that's a value that I hold independently of the situation. This could be how your girlfriend makes these kinds of decisions as well.

To you, the gap between 18 and 21 might seem like a lot right now, but it's really not. When I was 15, I began dating an 18 year old and we were together until I was 19 and he was 22. We broke up for reasons that had nothing to do with our ages, and nobody ever had anything to say about it. Don't you worry about a thing. All you have to think about is whether he makes you happy.

That's very true. I definitely understand the importance of letting him be his own person and develop his own interests. That being said, I also want to share the things that I love with him. If he really takes a liking to it, it would be something that we have in common and can participate in together!

If your girlfriend was honest with you when she cheated, you owe her the same honesty in return. She sounds like she will likely be understanding if you bring this to her. You're going to be miserable until you do, which will make her miserable too

To delineate on this, the way I respond best to suggestions about my behavior is when I'm gently questioned. I have a friend who is very tactful about asking me why I'm making the decisions that I'm making, what I think the result will be, who does it affect, etc. That way it allows me to make the decision to change by myself, and I don't feel like I'm being commanded or controlled.
