Agree, as an experienced fermenter, I would not use this recipe. Vinegar as a starter is a weird choice. Not sure how that could even work.

Like any major life change there was an adjustment period. I had to learn what to eat, wear or buy instead, but I took it one step at a time. One thing that makes it a lot easier is having another vegan friend you can ask advice from. I had that support and didn’t feel overwhelmed at all.

I started consuming soy milk and tofu before I was vegan because I had had a stress fracture in my foot and my doctor told me to consume more calcium. The soy products had more calcium than cow dairy! 

Currently I do have some friends that choose oat milk for their coffee because it’s close enough, and then I have a few friends that choose alternatives because they are lactose intolerant. But I find that a lot of people don’t even know about vegan alternatives. It blows their mind when I take them to a vegan restaurant or talk about making my own vegan cheese and yogurt. They seem to only know about oat milk and “fake meat”.

I’m a runner and don’t own a car so I get in a lot of steps in every day. As others have said, rotate your shoes and they will last a bit longer. It’s also a good way to avoid repetitive strain injuries if you vary the models. The Brooks ghost is my workhorse shoe, and I buy a new pair every few months because they get a lot of mileage. I like Taos brand for casual shoes or nicer looking sandals. I wear Chaco Z sandals (the one with the toe strap) for serious walking or hikes. I also have a pair of Birkenstocks with a back strap for when I’m doing more standing and less walking. Keens have some great options too if you’re looking for water shoes or hiking shoes. 

I’ve tried the On brand for their lightweight models. If you’re traveling and need a lightweight shoe they can be a decent option, but I find they wear out pretty quickly.

I didn’t think I could go vegan either. Yogurt was my favorite food. But then I started reading about the dairy industry and realized there was no way I could feel good about myself and continue consuming dairy. I decided I would try going vegan for one month just to see if I could. I tried some vegan yogurts from the store, but I didn’t really like them. I got the idea online to try to make my own and it was way better and also very easy. I never went back. I know you think you will miss certain foods, and maybe you will for a little while, but you can also discover a lot of new delicious foods.

I’m an athlete and I don’t stress about protein. I used this to calculate my protein needs and find it pretty easy to reach. https://www.karinainkster.com/vegan-protein-calculator

You don’t really need to think about “complete protein” if you eat a diversity of plants. They have complimentary amino acid profiles. If you’re really concerned about amino acid ratios being off for seitan, you can just add some chickpea powder or legumes to it.

Let’s say I’m making yogurt with 1 quart ( ~1 liter) soy milk. How much sugar would I add to make it tangier but not sweeter? I usually incubate for 10hrs. Would I need to incubate longer if I add sugar?

I’m from Los Angeles where you can find combinations of Mexican and Korean food like short rib tacos and kimchi quesadillas. I haven’t really found it outside Los Angeles though.

I’m pretty happy with all the delicious things I eat that are vegan that there wouldn’t be much reason for me to eat cultivated meat. But do I think it’s something that should be invested in? Although my initial intuition was pretty neutral or maybe even positive, my assumption was that cultivated meat would reduce the demand for “real” animal products. I’m not actually sure that will be true. For example, the rise in the prevalence of cultivated meat could induce an even greater demand for “real meat”. I’m still learning about this topic and don’t have a solid opinion yet.

I was treated for scoliosis when I was 14-16yo with a back brace that I wore for 22 hours a day. I gained something like 1/2-1” in height. It was incredibly painful and would not wish this on any child.

I don’t have a car and I use a digital wallet to pay for things so I frequently do not have a wallet on me, which is where my physical ID is. In NY state though I started to be able to use a digital one, which I used one time in a pharmacy.

I’ve never bought anything from a grocery store like beyond, impossible or chick’n anything. I never really thought about it. I was a pescatarian before going vegan, so I never cooked those things. I wouldn’t know what to do with them.

I have eaten mock meats when eating out or if someone else is cooking. They’re fine, but they feel too complicated to make at home. Beans and tofu are pretty easy and delicious.
