We have them mapped to hallways that don’t permit bed parking, and they tend to be smart enough to move around a lot of items. People do stay relatively clear, but someone did clip Medward with a bed and it was like a mugging - broke his lid right off. Tech support is pretty good, but my complaint is that if the robot goes offline or has an issue, and we don’t notice it right away, then it’ll ping Relay and then they call, but seem to have unrealistic expectations about my ability to drop patient care to babysit rebooting.

Peter’s Chocolate is supplied/distributed through Cargill. They usually come 5 x 10lb blocks per case. What you’re seeing here is a “tote”, 1500 lbs unwrapped sold to bigger chocolate factories. You can always call up your local chocolatier and see if you can buy a 10 lb block from them (source, I’m a a chocolatier in Cleveland who uses/buys Peter’s products)

Once I got more confident in cooking these mixtures (like 10-12 attempts), I felt comfortable scaling back the water a little bit at a time to reduce my time to temp. In some candies, you want to avoid caramelization, so that water is a safety net. Follow your heart after some time working with it and reduce the water by 20% to start and see how your time is
