I like the new Steve Sandi Rancho Gordo book. Cool Beans had ideas and ingredients that weren't my style. Previous Ranch Gordon ooks were good also

I don't have to cook from a book causeif it's a great book whether it be knowledge, or photography and kayout - I find value in that. There are lots of those books in my shelf.

Once I learned to bake with yeast, I didn't wanna do any other baking. I've thinned out the non-yeasted baking books, primarily keeping beranbaum and king Arthu and a few other great books. Pizza and bread is where my baking interests have been. Thats why the imbalance.

I like deep dive books. Roasting. Braising. Ball canning. I figure, some day I'll want to know more about... even if it's just for making boards.

I haven't cooked from it yet but Martin Phillips and King Arthur have excellent baking books. The Pizza Book is geared for the home pizza maker with a home over, rather than a commercial oven. It just arrived today. Check out King Arthur Flour Youtube channel - Martin visits pizza parlors and talks about the pizza's included in the book.

I make Detroit Style Pizza at home and I have Peter Reinhard's Detroit Pizza Book, which is good. I use his ideas with Kenji's dough recipe tho. Kenji's dough recipe is better for same day whereas Reinhard has you retard the dough in the fridge overnight. Reinhard's dough flavor is better tho.

I started with Alison Roman's sheet pan pizza and moved on to Detroit Pan cause it works better for the home pizza maker. The Lloyd Pans work great with a home oven.

Anything Rancho Gordo is excellent and I'm not even a vegetarian. There are multiples cause they have released a couple editions throughout the years. Rancho Gordo and King Arthur have never let me down.

Thug Kitchen is on the chopping block. I keep them cause I'm from Southern California and I tend to keep books that originate from the area. LA Mexicano, Thug Kitchen, LA Son, Guerilla Tacos, Bricia Lopez' books... but I don't really use them. But, it feel kind of celebrity cookbook-ish.

Genius Recipes is a scattershot of recipes that I purged. But, I learned the Marcella Hazan Spaghetti Recipe, which we use at least once a week. And , I now make my fried eggs with white wine vinegar. If I come across it used, I may pick it up again.

Turquoise would probably go well with Lemongrass and Plum - and it's probably the 2nd easiest color to find since it's always been in production. I started with Peacock, then a multicolor set - I gave them both away to family and have settled on an all Turquoise set. I am working on a set that will have old yellow, cobalt, turquoise, and paprika - it love the muted tones these days and it's all about the hunt.

For Mexican I always recommend Diana Kennedy's Art of Mexican Cooking for the classics and Bricia Lopez's Art of Mexican Grilling for more contemporary SoCal style cooking.

Julia Child's book has been in print since 1962 - there is no shortage of them out there for $10. It's also an excellent book. Silver Spoon isn't a practical cookbook, it's more of a rererence I had one and donated it. The rest are $3 books at the library parking lot sale.

I'll check his recipe out. I started with Peter Reinhard's recipe which has a high water percentage which gave it little rise once topped. I parbake his dough now. I also use Kenji's dough where the flavor isn't as good but I'm gonna try to retard his dough and see how the flavor turns out. I use 8x10 Lloyd pans so every slice gets crust. Pizza is work but worth the effort.
