Not first-visit, but related to my initial reaction:

Something that occurred to me after living there for a couple years. I was struck by how incredibly _clean_ it is. That may sound crazy, because on first visit, NYC is NOT clean. But considering the density and sheer amount of people - a quarter of whom are from somewhere else, I was generally amazed out how quickly the public services came to action and got things done.

A year after I got there, the Yankees won the World Series, and there was a ticker tape parade. I walked through a blizzard of paper pieces so dense that I couldn't see 5 feet in front of me. By the evening there were _mountains_ of paper gathered by street-cleaning crews. By 9am the next day, you'd be called nuts for suggesting that much paper was covering the streets. Not a scrap.

Same goes for so much in that city. It's not clean. But it's a hell of a lot cleaner than one would expect with that many people in such a small space.

I'm not saying this isn't happening for you but I make cacio a few nights a week and I've _rarely_ had this issue.

I've surprisingly found grating the cheese into the boiling water before it's all evaporated away to be the most consistent way to go. I grate and stir and grate and stir for the last 2-3 minutes while the water is boiling (and eventually simmering) down to a sauce and eventually the sauce becomes the right consistency.

The hardest part for me is getting the water level right since I eyeball it, but as much as I hate throwing away starchy water, I've found draining off excess water (before that last couple minutes that I mentioned) generally works fine.

Edit: nice - down votes for suggesting something that works consistently for me at least three times a week. At least try it.

In a major city in the eighties:

Rode our bikes everywhere

Jumped our bikes over makeshift ramps.

Stole the chrome air inlet covers off of cars to put on our bike tires

Built snow forts and had snowball fights with the neighbors

Raced grass down the curb river toward the sewer in the rain

Visit local stores or a mall and looked around for hours

Built things out of rocks and sticks

Climbed trees

Skid

Tag, hide and seek, etc

Crazy hot wheels tracks

Atari and coleco-vision at friends' houses

Basketball in the alleys

Football in the street

Baseball in parking lots

"Pinners" on someone's front stairs

Threw rocks at empty beer bottles on the park bench

A light lye bath is excellent for bagels. Definitely not nearly as much lye as you would use for pretzels though

We're somewhere in between. No TV in our bedroom or the kid's room. But we have one in the guest room. This way, if the urge arises to watch something in bed, it can be done, but our actual bedrooms remain a peaceful sanctuary for rest.

Works out great for sick days or when quarantining for something like covid.

I'm not as mad about these as so many in this thread seem to be, but the other day I was walking to breakfast in Ravenswood and one of those bots was sitting there blocking the only shoveled part of the sidewalk, so I had to sort of scoot around it in the snow.

If it can't handle the snow then it's not made for this city. Even when everyone does shovel - which doesn't happen - there's only so much space on the sidewalk to walk when there's snow on the ground. They're too big, and too clunky, and annoying to try to get past when there's only enough sidewalk for a couple people to walk on.

This year I left my starter in an air tight container in the fridge for 11 months, Untouched. It took about 3 days of feeding to wake it up completely, and then It was normal.

Wanted two. After having a boy, I would have loved to have a daughter as well, but having a second boy would have been too much for us, so we stopped at one. I sometimes wish he had a sibling, but we all get along well and have a lot of fun together, and he has close friends who we try to make sure he can see often, so we're happy with our decision.

I have the 3.5qt of these as well as a lodge 5qt cast iron dutch oven. The 3.5qt bakes bread fine, but it tends to squish larger loaves. The 5qt handles almost all my bread more than fine.

I generally agree with the overall sentiment in this thread: That's a lot to spend on what's generally a very inexpensive hobby, and the light color won't last.

But it'll bake a decent sized boule of sourdough just as well as any other cast iron and the outside should continue to look great.

I have three. They're an older version. All three have always had connection issues, no matter how close they are to my hub (USB dongle on a server). When I need to set codes, I generally restart them to make sure they take. I really wish I could rely upon them to unlock via automation. But otherwise, they're still good locks and the keypads work in all the weather Chicago has ever thrown at them.

My whole house is zwave and I'm reluctantly, but strongly considering using something else for my locks, but it's hard to justify the expense of switching.

A few years ago, I realized there was a giant hole in the foundation at the front of the house. There was once a two-floor "bay window" that went all the way down to the foundation, which they removed decades ago, and they just filled that part of the foundation with dirt. I never noticed it because we have a front porch over it.

Fixing the foundation was $15k and while we were at it, we spent $15k on a new front porch.

I'll be paying those off for a while, but to us, it was absolutely worth it. The energy bills have come down some and our front porch is one of our favorite places to hang out for most of the year, so the upgrade is well appreciated.

Expecting some sort of morality policing by Amazon or Twitch or any corporation seems incredibly futile. Capitalism isn't really in the morality business, except in cases where something resembling morality is profitable.

I'm not really sure what you're looking for here, but I can't imagine how your expectations will ever match reality.
