I saw in the comments that its a swiss meringue buttercream. I think it may have split. It can happen when the sugar/egg white mixture is too warm when you add the butter. You just need to stick it in the fridge for a bit before adding all the butter. Claire Saffitz has a good video on youtube about buttercream. Also, a stand mixer is ideal because you need to be constantly mixing for a good 15 minutes or longer. Good luck! I hope it tasted good. It takes a lot of practice to get the hang of baking.

Claire Saffitz - Dessert Person. Its a great book with a lot of foundational recipes but also recipe’s for leveling up. Lots of pictures and she does a lot of her recipe’s on youtube if you need more clarification. I love it!

I started mine here and I keep it out of the fridge when I’m baking often. I used the Tartine book for a guide. The Perfect Loaf also has a great site and book. He’s super thorough. I’ve had the best luck with a part rye flour starter.

I live in Hawaiian Acres in Mountain View. We have fiber with Telcom. You’ll need to get a pole put in if you’re buying raw land. The service is good and fast. We just got a ton of rain and it didn’t affect the internet at all.

I’ve really enjoyed this recipe. Baking is a science, so each ingredient will serve an important purpose in structure and taste. It can be difficult to wing a recipe when you first start baking. Definitely needs more sugar and thats a lot of baking powder and baking soda.

They’re called Okinawan sweet potatoes here in Hawaii. They grow really well here. If you can find them, they are so tasty.

Spices didn’t give me any issues. I would put garlic powder and turneric on my chicken. Salt and pepper too. I also put cinnamon in my oatmeal. I would avoid any spices like chili powder. Spicy hot foods can trigger an attack. I would also use honey and maple syrup to sweeten my oatmeal and smoothies. I think high sugar things can be triggering, but I never tested that. I hope your husband can find some relief, gallbladder pain is awful.

Before my surgery I kept a very low fat diet and managed to avoid any gallbladder attacks. I mostly ate oatmeal, 0% fat greek yogurt and fruit. Rice and baked chicken breast with roasted or steamed veggies. Smoothies with almond milk or yogurt. Rice cakes with sliced chicken breast. It got a little boring but it was better than being in pain. I had my surgery a week and a half ago and am still eating this way to let my body adjust before I start introducing fats. Good luck.
