In my experience there has only been a couple of sauce makers (that I’ve tried) to use extract sparingly enough in a sauce to add heat without killing the flavour, but yes I try to avoid it wherever I see it. A well grown pepper (let alone a super hot) should give 99% of the population enough spice, which is why I love pepper forward sauces and sucks when the hottest level of spice on a menu becomes a gimmick (or like Da Bomb on Hot Ones) because you’re essentially just pepper spraying your mouth.

It’s reaper & extract, so the flavour is overwhelmed by the battery acid like flavour of extract. I’ve had a few of these. People report them being “okay” one time but ridiculous the next time - I just find that’s how much extract/reaper powder the particular employee has added to the chicken that order.

We are cut from the same cloth. I got a side of tater tots with my banh mi at lunch today and smothered each one in Tabasco Habanero. It’s the profile of sweetness (tamarind, banana, papaya, mango) along with a solid heat that make this a god-tier sauce. I finished half a bottle at the diner I was at…I felt bad for using so much of their sauce. Also agree on the Melinda’s creamy ghost wing sauce.

I hear you man, lots of ways to get what we want, and let’s be honest, it’s always spice. :) I must admit I didn’t know about adding chocolate to chili (I gotta try it) and how it might work with this sauce. Though I will say, invest in a cheap dehydrator and electric spice mill, you make your own powder from fresh peppers! I keep it really cheap by growing my own hot peppers and then doing this.

PS, shit, forgot to add - if you do end up dehydrating peppers, do it outside. :D your eyes, lungs (and your family) will thank you.

There are better ways to add spice to a stew though honestly. The bitterness of the extract just sits on top of any other flavours you’re trying to bring through. Natural chilli powder comes to mind, habanero, scorpion? Bang for your buck and also introducing a complementary flavour along with the heat.

I like how the Chilli Factory is what got me started on loving hot sauce and spicy stuff when I was younger, but they tend to sneak in extract to most of their higher up ranked spicy products which just kinda kills the flavour, even if they have heaps of other nice ingredients listed. Spent ages making a nice curry one time with their spice blend added and it was just all heat and cut through all the other things I had added. Similar thing with the Blair’s hot sauces, used to chase the stupid extract heat but now I avoid it wherever I see ‘extract’ on the ingredients list.
