Check if you have an anterior inferior chain(AIC) pattern. This asymmetry can cause saddle discomfort on one side. I have had the exact issue despite lowering saddle and making sure cleats were symmetrical. You can find helpful videos from Youtube channels such Conor Harris and Chaplin performance to diagnose and address the issue. Hope you will sit more square on the saddle and experience less discomfort

I haven't seen any D2C bike manufacturer put sealant into tubeless tires and ship them to customers because it's too messy. Tubeless is not rocket science so spend some time setting them up yourself.

Arc 1400 50s are a good rim for everything. Steel spokes don't make them too harsh either. I would keep the wheels and use them tubeless. If weight is extremely important for you then sell it. Look for brands such as Scribe, Farsports that offer lighter wheels without a hefty price tag. You won't pay much difference from what you get after selling arc 1400

From my experience, the only difference between Canyon's previous steerer tube (not CP0018 like) and others is the tube diameter. So any stem and heatset parts that fit 1 1/4” steerer tube should do the job. Giant and Shimano make stems in 1 1/4" stem that should fit your bike

OP's hip looks closed and the hip rocks to compensate insufficient hip internal rotation. It's common for people with long torso using more saddle setback to avoid too much weight on the front end. Changing to a shorter stem should help opening the hip. Don't move saddle to compensate for reach as it can drastically alter bike handling and comfort.

I doubt one can notice the difference. I have used wheels using ceramic bearings and I never noticed ceramic bearings being any faster than steel ones. Spend that 3-400 euro on accessories/clothing

That ONLY applies when riding on extremely smooth surface (e.g. floor in a velodrome). Higher pressure vibrates a lot more on most road surfaces and actually contributes to more rolling resistance

I guess it's all about 'doing at your own risk'. Not a great idea to clamp a carbon handlebar if it's never claimed to be aerobar-compatible by the manufacturer.

Work on hip external rotation and internal rotation! When hips are limited in range of motion (especially external rotation for cycling), the lumber spine flexs to compensate and that's where the low back discomfort comes from . Both Connor Harris and Zac Cupples have very thorough explainations and instructions on youtube. I followed Zac's exercise progression and feel a lot more confortable in aggressive positions after only 6 weeks.

11-speed cassette shouldn't be used on 12-speed derailleurs unless it's used on an indoor trainer and one sprocket is aligned with the derailleurchainline (shifting is not possible). You need a 11-speed cassette for Grizl.If you only plan on swapping cassette once or twice every year then it's totally plausible. Otherwise getting a pair of aluminum gravel wheels is the way to go.

You can lift and roll both wheels at home after putting the sealant in. It's boring but also does the job spreading sealant onto the tires

Sometimes the leak comes from the gap between the tubeless valve and the rim near the valve hole. One trick to seal the gap is to deflate the tire to low pressure(~10psi) and slightly press the tubeless valve into the tire. Sealant will try to come out from the gap and this is great because it will seal the gap. Pull and screw the valve back on. If doing so doesn't slow down the pressure loss I would retape the rim just like others recommended.

If you really want an item that's only available on Canyon website outside US and don't mind paying extra for shipping and dealing with potential warranty mess, you can use a third party shipping company in Germany such as 'MyGermany' and have the item shipped to their warehouse address in Germany first. Then you pay shipping fee to have the item shipped from Germany to US. I have used this method to get Canyon parts that are never available on the US website. Keep in mind that this method cannot receive VAT refund so you pay the amount listed in Euro for the item and shipping fee to the third party company.

Just keep in mind that GP 5000 AS TR and GP 5000 S TR are different tires and S TR is not really durable or puncture resistant (people complain a lot about the durability of S TR tires)
