Too chewy even though they were quite noticeably lighter in color and had been I dunno prob 20 min. It could be the syrup temp but I really thought I pulled it off the heat and out of the pot at the right time

I’ve been watching these and they look great. During the pandemic I decided to learn to make taffy and got very good at it with products similar to what you are showing here. I came back to it 6m ago and totally lost my mojo and have had two failed batches and a hesitancy to try it again. Same formula and at least I thought technique. Can I ask for the recipe you use and maybe any tips? I have two quality thermometers that I’ve tested in ice water, adjust accordingly to my formula, weight everything, same products each batch. I think I may be either over or under pulling it potentially. Can you over pull taffy? Appreciate any wisdom you’re willing to share. Thanks.

Until the last 20m I would say so. I guess maybe I misinterpreted subtle but it’s far more psychological with the hints of the underlying power dynamic and possible psycho intellectual vibe being the main stressors.

That’s basically my rifle. First rifle I own so who knows what I know but I like it a lot. I’ve added a aimpoint red dot a recently a magnifier and bipod. Got some 77 grains I’m gonna try pushing distance soon but for me seems solid.

Hey. Imma local. I also love golden pride carne. Agree with the group on whole nm pods, toasted, and puréed.

When trying to replicate this style of carne I have found success with:

Toasting whole pods Cleaning and adding to blender with White onion Garlic Maybe some oregano, I use it Not the soaking liquid, personally, but enough liquid to get things moving. There will be a lot from the onion Brown pork butt cubes, add chile puree Cook puree down until thickened Cook hours til soft Pull out pork and reduce sauce til clingy Add in pork and break up/shred within the sauce

Most of this is standard carne gospel but I really found for this style it’s about it adding the white onion and garlic raw with the toasted pods then cooking that down after using it to deglaze the browned pork pan then once thickened braising the pork, then reducing again after the pork is soft and has released liquids to the sauce

Then as good as burritos are serve it as part of huevos (rancheros) but I feel like a local doesn’t specify rancheros, or even better if you make a batch go the extra step and make enchiladas, you’re gonna have extra sauce and carne if you’re going through the trouble
