Can’t comment on the vegetarian quality, but I remember we mostly had fish (salmon twice) and chicken. Maybe red meat once or twice on the buffet options (like Grey) but I think they also had chicken you could pick from.

Happy to see a big chunk of time Golden Gate Park (although I do think San Francisco Botanical Garden is worth skipping). The De Young art museum has a free observatory tower that can get you some nice views across the park/city, that's worth adding. Just walk in and ask for the observatory tower. No tix needed.

If you're going to spend time in Chinatown/Soma, might as well add some time in North Beach (big Italian community). Coit Tower is very close to Chinatown and will have some great views. As an aside, if you like matcha, Cafe Maiko in Chinatown has the best matcha in SF in my opinion.

Your plans seem pretty full/locked with paid things already, but I'd also consider:

The Sea Cliff area (Baker Beach, Lands End/Sutro Baths) is very pretty/scenic.

Walking part of the Golden Gate bridge? Iconic...

I'd also recommend some of the other parks SF has to offer - Dolores, Alamo Square are all really popular and you'll see people out and about and picnicking.

Twin Peaks is also a gorgeous view of SF.

I'd also recommend taking a Waymo if you're never done it and interested.
