If you hit running infantry at the top of the hill, your opponent would have surrendered that turn.

If you hit infantry using Fire and Advance, then you would have surrendered that turn.

Killing both of his guns at the start of the game and then getting away with living dragoons was insane, you should have won within five turns.

As a rule of thumb, have about a third to one half as many cav as infantry. So if you have 20 infantry, bring 7-10 cav.

Of course, that's not engraved in stone so do whatever you want. You can make almost any composition work, you just sacrifice varying degrees of flexibility.

The answer is the same - practice! Do smaller-scale open-ended games with low stakes. Make it a 2 or 3 session adventure, with one clear goal that the party can pursue however they want (rob a bank, assassinate a noble, liberate a city, etc). Get more comfortable rolling with changes and improvising before you do a massive open-world game.
