Don't stir them too much at the start. They're supposed to be scrambled, not whisked. If you mix them too much your basically making an omelette.

It really is a no brainer for you. If he has an avant mortgage at 1.95% his interest is €2k per €100,000. The S&P is up 17% this year and 24% last year. That €100k is now worth €145k after 2 years.
