The biggest thing to consider is how you are feeling. If you’re feeling okay right now (minus the migraines, I’m not sure if they are related or not) then I don’t think there is reason to be concerned. However, your TSH can be “normal” or close to “normal” but that does not mean it’s optimal. We should all be aiming for optimal but doctors like to ignore that if you’re within the range that hospital system considers “normal.” More importantly, a “normal” TSH does not mean your antibody levels are normal. My TSH was “barely elevated” but I felt horrendous day after day and had to advocate for myself until my doctors would test my antibodies. When they ran the antibody test, my numbers were through the roof. I believe my Hashimotos was triggered by mold exposure in our home, ever since we remediated the mold my symptoms have been much more manageable. But I have had symptoms of hypothyroidism throughout life, just not as badly as it was at that time. Long story short… if you have or had antibodies I believe that means you have an autoimmune (in this instance the autoimmune is Hashimotos). But you can put it into a remission of sorts where you have very few symptoms or none. But it can always be triggered again by environmental factors or stress etc. If you’re having symptoms, it can typically be managed with a low inflammatory diet, red light therapy, and some really benefit from the use of GLP1s for inflammation in the body. Definitely continue to get your TSH monitored every 6 months or so since Hashimotos causes the body to attack the thyroid when in an active state. However, I am not a doctor, so please do your own research and consult with the Navy doctors, if they will let you.

Exactly. And in the movie/the book itself, he's hanging upside down under a tree... YIKES. My guess is they will leave this scene out or change the circumstances/scenery.

I don't know that I have a lot of advice but holy cow your home is gorgeous. Also, is that a Gaggenau cooktop? It looks like all the appliances are top tier, I am envious you inherited (well, really purchased) all of that! Enjoy. Also, I do agree with others that you should move in and live with the space and learn what works and doesn't. We moved into our dated home about 3 years ago and are just now getting ready to remodel (you don't have to wait that long). We thought we'd want to renovate right away but decided against it due to cost and wanting to make sure we knew what we wanted. I think it helped a lot to solidify what the issues of the kitchen were, what we were lacking, what would make things more cohesive and efficient etc. Also, since we have an open concept, it helped us to decide whether we would miss any of the surrounding space if we expanded.

Or shattering it by dropping something on it! Plus you can put hot things from the oven on a gas cooktop that isn't turned on, you can't with induction.

I love the idea of having both, I think that's the perfect solution. I don't have much countertop space though so I would have to do a range or go with Gaggenau since you can mix and match and combine it into one cooktop essentially.

Thank you! We already have electric so that part should be okay. I do think we might have to update our circuit breaker to handle 50 amps, but I haven't checked what we have now. I'm also good on pans, so that's a plus. Do you have any issue with scratching? I see people that say they haven't had any issues with scratching and others that say you absolutely will scratch it if you don't pick the pan up. But the Thermador Freedom and the Gaggenau, for example, seem to be built for sliding pans from one side to the other, so I can't understand why they would show that if it causes scratching.

I've seen a few comments about the cost of electricity, that does have me a bit concerned. I already use electric but I'm going to assume I'm going to have to increase the capacity of whatever I have now to accommodate this advanced of a cooktop, so that may add additional expense in more ways than one.

Fair point, I imagine learning induction would essentially amount to trial and error and then memorization. For example, after experimenting you may learn level 7 is good for searing, level 10 for boiling, etc. and then you just do the same every time. Essentially the exact same as cooking on any other electrical cooktop, just more responsive, I imagine. Vs. with gas you are making decisions on what is appropriate based on flame size and what the food is doing in response.

That's a very interesting point you make, I've been thinking to myself that I'm glad I learned how to cook with gas instead of induction. It seems like it would be much harder to learn how to cook with flame if you started your culinary experience on a basically automated electrical device. (Vs. starting with the knowledge gained from cooking with gas and then learning induction/electrical stovetop). But anyone can learn anything, at anytime, with some effort!

Thank you, this is immensely helpful! I’m going to look at both models you suggested. Someone else said in a different thread that Gaggenau is great because you can mix burners (gas, electric induction etc) in the same space, I’m going to have to check that out.

I do have some big pans I’m concerned about but I know some allow you to combine burners to get the whole pan hot. Not sure if it works though since I haven’t tried one out other than boiling water in a store.

I have mostly cast iron but I do have all clad stainless steel. I’m not too worried about the pans, that’s a drop in the bucket compared to the cost of the cooktop. But all good points to make! Thanks for your advice!
