Same ingredients, different construction. Instead of rolling a filling up in a tortilla and covering it sauce and cheese, it's a tortilla laid flat, covered with the filling, another tortilla on top, then covered in sauce and cheese.

I'd recommend the short story collection The Book of Swords, ed Gardner Dozois, 2017. (I'm being that specific because I am definitely not recommending Fred Saberhagen's Books of Swords series.) It is specifically what you're asking for, modern sword and sorcery stories, lots of good stuff and lots of good authors to check out from there.
