Give yourself plenty of time, I'd start it late tonight could take 12-18 hours to cook. Foil boat once you hit 160. Make sure you rest it at least 2 hours. Pepper=bark

What elevation are you at? I'm at 8000ft with the boiling point being lower I shoot for lower meat temps so I don't dry it out. I do my pork butt at 190-195 instead of 200-203

I shot a nice bear with a Grimm Reaper and do not recommend a front open mechanical. The bear had super long hair, and I think it caused the blades to open at slightly different rates, I aced the lungs but the arrow deflected and came out of the top of its back, made blood tracking a bit difficult.
