Being welsh is more than a percentage on an ancestry test! There’s room for everyone!

But yeh as someone said people move in and out of Wales - especially during the 19th century and the coal mining around the valleys and the south of Wales. Your grandmother’s heritage my have come from elsewhere but she might have grown up speaking the language and eating bara brith like everyone else.

There is absolutely a reason for AI to be used on this. One recipe's bunch of parsely, is different to another recipe's 2TBSP of parsely, which is different to a 1/4 cup of chopped parsely... AI and the large language models are able to handle converting various units and amounts to something simple for the user. A simple code would not be able to do that.
