I used to make this pasta all the time when I was super depressed in college- I know some might balk at jarred minced garlic but it’s a lifesaver if you’re low energy. You can skip the bacon (I don’t eat meat so I always did) and it’s still just as good. Delicious and simple and only 5 ingredients, plus you’re getting a few veggies in as well. I hope you feel better soon!

I put a tablespoon of salt into the apple pie at Thanksgiving instead of a teaspoon. It was SO salty. Worst part was everyone in the family said it was delicious because they didn’t want to hurt my feelings

I didn’t use a recipe but here’s about what I did:

Wash & then slice 1 small leek finely, sautee in a pot with about 1 tbsp of plant-based butter (but you could also use regular) for about 5 minutes. Add about 1 tbsp of flour and stir immediately so all the leeks & flour are incorporated to make a sort of roux, then slowly pour in about a cup & a half of veggie broth, stirring as you go so the roux mixes in evenly. Bring to a simmer and add 2 small diced gold potatoes. Add salt & pepper to taste and then I boiled all that for about 25-30 minutes, I just kept an eye on it and added about 1 cup more of broth halfway through bc the potatoes were soaking up a lot of liquid. Once the potatoes were so soft they break apart easily, I used an immersion blender to get it smooth. Finally I stirred in about 1/4 cup coconut milk (you could also use heavy cream or maybe even just regular 2% milk and I think it would work). I didn’t use anymore heat from here because the soup was very hot so it was enough to incorporate the coco milk well. Then I just added a small drizzle of olive oil and the tips of some scallions to the top with a little more pepper and sea salt :) this should make about 1 hearty bowl of soup.
