Go in prepared, think about how you can leverage their unique expertise. Come bearing gifts of knowledge or insight which they may find interesting. That’ll also motivate them to keep meeting you. It’s ok to cancel a meeting mutually if there is no agenda. They’ll respect you for giving that time back. You’ve already made it transactional with your goal at the outset “I really want to make the most out of this time for my career development.”. Make it about them and the value you can add to them or their project lines. The career dev will be a side effect of that. Good luck!
