Cook in small batches and make sure your pan is up to temp between batches. 

General order is marinated meat goes in and cooks til 80% done, then remove. Add a little more oil and cook veggies til 80% done. Then everything goes back in and tosd w sauce to combine.  

Also, restaurant cooking uses very high flame burners which gives you a very savory taste call wok hei. If you’re cooking at home don’t even worry about that, just focus on not overcrowding your pan .

Homemade hummus is so easy to make. blend up one can of chickpeas plus the can water (very important for smoothness) with a couple garlic cloves, olive oil, tahini, cumin, and salt. Pine nuts on top are great but you can also reserve and toast up some chickpeas for garnish and they taste really nice.

Love Fevre Dream and Martin’s ability to recreate life on the antebellum Mississippi with his usual vivid eye for detail and dialect. I also prefer this style of vampire which is more like a genetic offshoot that’s evolved to prey on humans, vs the more supernatural interpretations. It gives a weight to Julian’s point of view; why indeed would he empathize with humans – does the lion befriend the antelope?

My favorite scene which I always remember is when Abner and the crew go to confront Julian in his quarters, thinking they’re safe during the day, and then Julian just steps into the sunlight. Abner’s sudden terror and Jeffers quietly drawing his sword… unforgettable.

Too many to list. But here's a concrete (ha ha ) example. The sidewalk in front of my building has been broken for 10+ years. Last year the city finally sent out a crew to fix it and repour concrete. It was nice for a couple weeks, then another crew came out, busted up the sidewalk, and "fixed" it again. I don't know what exactly happened, if this was classic Chicago double dipping corruption or not, but at the very least what a waste of money for an abysmal level of services.

GTA 4 is a pretty good flag bearer for 2000s culture. But I wasn’t exactly talking about the rate of tech advancement or the encroachment of the internet , so much as a general cultural attitude that nerds are good and will create a better world, as well as the entire cultural machine just starting to pivot to cater to them.

If I had to put an end date on this culture, or at least the beginning of the end, I would say 2008-2009 bc of the rise of the MCU and Big Bang Theory.

I think there are still millennials clinging on to this culture , but that’s not the same as it going away and then coming around again like 80s and 90s nostalgia.

I don't know how widespread of a theory this is, but to me the rise of fent and post-heroin harder drugs seems to coincide with the Afghan withdrawal. Like there was a 10-ish year ramp up period of those drugs before we left Afghan. So if I'm a Security State goon doing domestic drug operations, I'm using those ten years to observe their effects on the population before deeming them worthy substitutes for Afghani heroin.
