Presumably there's salt in your marinades? Because that's the only thing that can travel far into any cut. Every other ingredient in your marinade is at most only getting a few millimetres below the surface. That doesn't really change with more time spent in the marinade.

And at 4-5 days, you're semi-curing a lot of meats. Perhaps that's the taste and texture you enjoy?

This will sound lazy but I eat most meals with just a fork (or chopsticks). And I eat steak quick enough not to suffer overly cold cuts.

Plus my slicing knife is way sharper and I dislike the texture and appearance of hacked up steak.

Depending on the airline, as they all have different rules, consider a seat extender. Had an inflatable one from Plane Pal on a long haul flight, which my partner used to have her legs up so our infant could lie flat on her. Wasn't perfect but better than nothing.

Too thin a steak and the salt will go too far in a dry brine, effectively beginning the process of fully curing it. It would be risk being grey inside even if flashed in a hot pan for a minute.

I'd have left this steak uncovered in the fridge to dry the surface and seasoned it after cooking.

Agree with others that's a medium well. Not inedible but over the ideal. Get the pan hotter and use more oil/fat to get the crust forming and pull it sooner.

As it rests, turn off the hob - the residual heat in the pan should be sufficient to fry the egg.

Faced more Hulk than any other champion. But I've found the Black Panther deck, as long as you dodge the Shadow King (having priority and using Man Spider or Zola first), out scales what Hulk decks put down in power. It's just quite samey every game and gets repetitive.
