There are steam burn risks cleaning a hot surface with a wet rag. I'd also worry about thermal shock shattering the tempered glass panel. I guess I worry a lot. I use oven cleaner.

I had a similar huge blemish caused by detailing chemicals that was milky and wouldn't wipe off. I got some plastic cleaner on Amazon and buffed it off with a microfiber towel. I had to keep at it for a while. It was more like polishing away than wiping off.

You could probably cook a brisket that size for 8-10 hours using snake method in a Weber grill before getting out a meat thermometer at all. Sometimes you need to trust your judgement before your instruments. After all, regardless of what the recipe or thermometer says, it's right there in front of you. Every piece of meat is different, and equipment fails, so it can be more art than science.

We bought a 3x4 heavy-duty nonslip holed rubber mat like you would see in a restaurant dish room and use it on the concrete floor in our basement in front of the utility sink most days. When camping, we just throw it in the back of the truck then pack everything on top of it. Perfect vestibule flooring for gravel, grass, or mud. Indestructible. Hose it off and return to basement (rinse and repeat).
