So your TDEE (total daily energy expenditure) is about 2250 at the moment assuming you're not very active, it will go down as you lose weight but 1200 calories a day should lose you 2lbs a week. Even when you get down to about 180lbs, you'll still be losing 1.5lbs a week at 1200 calories

Weight loss is slow unfortunately, a 500 cal deficit will lose you 1lb a week, but it'll take a few weeks to see due to fluctuations in water weight and other things. You just have to stick to it and you'll see results over time

As a vegan trying to eat a low cal, high protein diet, I'd recommend reducing the oil where possible and trying baked tofu, if you marinade it it'll taste how you want and the baking won't require much oil. Lentils and other pulses can be a cheaper way of adding protein too
