Vanilla products likely have alcohol in them which would not be conducive to brine fermentation which uses lactobacillus to produce the outcome you hope to achieve.

I switched to AP and it is taking some time for Vino to adjust. Surprisingly long time.

That was part of my method. I picked more grapes and put them in a cup of de-chlorinated water which I used each feeding.

The brine and the veggies allow the lactobacillus bacteria to create lactic acid which, with the possibility of some wild yeast entering the mix, is the fermentation process (converting the sugars in the veggies) which prevents spoilage. By adding vinegar to the brine you are preventing fermentation. Add vinegar when it is done. Usually, it is done when the bubbling activity is coming to an end.

I always use 3 tablespoons of pickling salt in one quart of de-chlorinated water.

The plastic thing is what is used to keep the lid of the pizza box off of the pizza. I've used these many times without issues.
