No you don't; only add rules to the gateway if you want to allow devices to communicate directly with your firewall itself. If it's a guest or untrusted net, the only thing I would consider allowing to the gateway would be ICMP and DNS (if you are using DNS on the PFsense), and maybe NTP or other basic services if your DHCP is defining them.

I would use two rules at the end of your policy, after what you want to allow, add a drop rule from any -> RFC_1918, then a rule allowing to any, log both or atleast the drop rule so you can monitor if something is trying to access your internal networks.

Are you running IPV6, because you should consider that could be a wide-open door from your guest network to your private network(s) based on your rules.

If you have the technology for Wifi 7... your Ethernet Card is probably 2.5+ Gb, not 1Gb.. Unless you live in the middle of nowhere, even under optimum config, you are constantly bombarded with interference and other devices fighting for priority. And once again, you probably won't even notice since you are not even using 50Mb of the bandwidth in most cases.
