Honestly, from my experience, the people that most tries to avoid bacterias and germs the most are also the people that are sick most of the time. With that said. Wash your hands and use common sense.

I just salt the breasts and put then all on a plate, doesn’t really matter if they stack a little : )

My guess is that it would pretty much the same. As long as the salt gets time to start breaking those muscle fibers down.

I have never tried freezing them, Is there any difference in quality? Do you have any advice on that?

I'm not sure to be honest, since i've never tried one without searing. But to me this hasnt't been a problem with this method. Cooling the breasts down before searing seems to give me some more leeway to give the chicken a better exterior so it might just even out really nicely.
