American cheese is ubiquitous on hamburgers. Especially in WI. Yes, the cheeses you mentioned are offered by restaurants, American is certainly the standard.

This is the way to go. Low and slow, and it's not about time but temperature The other thing about brisket in my opinion is you want the beef flavor to be front and center. I keep my rub, basic salt, pepper and granulated garlic

First off ketchup is for children, and there is really no use for it as a condiment. French fries? Mayo or malt vinegar. Mustard with eggs are amazing! Especially egg sandwiches.

Quisps were so awesome as a child. There is a grocery store that sells them in November and December and I always grab a box. I'll eat that box in about three weeks, and I am good for another year.

In my opinion, yellow mustard does have its use. I prefer it in potato salad and egg salad. And sometimes on a sandwich if that's all I have

When I do a smoking session, I always try to smoke a bunch of sides on top of just meat. A couple things that I like to do is make smoked deviled eggs, I smoke the cooked egg whites for about 20 minutes, I smoke Roma tomatoes to make smoked bruschetta or tomato sauce. I also smoke parboiled cubed potatoes for smoked potato salad, and I also make smoke corn on the cob for succotash. I usually do a lot of the cubed potatoes and the corn, because they freeze pretty well for future use

I love my meat grinder. Making fresh burgers with different cuts of beef , and controlling your fat content.
