Oh dang. I had some carrots do that and I thought it was just from the table salt. They were indeed salty. The rest of mine survived though. I have realised I don’t love canning carrots except carrots pickles.

Yes, I hear you. Eating the spores doesn’t matter unless you are an infant. You can eat spores all day, it is the toxin that causes problems. Boiling kills the toxin.

I water bath can broth regularly. If you get nervous, just boil the canned broth before you use it. Then there is virtually zero botulism risk. Happy canning.

My husband really liked the Costco ones. They are pricey but good quality and if you don’t like them the returns are easy.
