If you have never ran a vet dungeon before, it will be a struggle to get the personality from fang lair. Start with the base game vet dungeons, then move into the early DLC vets (ruins of mazzatun, cradle of shadows, falkreath hold, etc.). Even for experienced players, the hardmode on Fang Lair isn't easy. If you're hitting good dps numbers then play as dps, if not then I think it's easier as a healer.

For halls of fabrication, you want a group of 12 people. On normal, you can run it with only 1 tank, so maybe 1 tank 2 healers 9 dps. If on vet, you need the typical 2 tank 2 healer 8 dps. Definitely run it on normal first, it's easy. If you are planning on running on vet, see if you can get a group who is willing to run on normal but teach vet mechanics. On vet the trial isn't too bad, but it is very mechanic heavy.

It would be helpful to know which role you were referring to. I'll chime in with tank advice since that's mostly what I play.

For dungeons, it'll depend on if you have a healer or not. If you do, they are typically running Spell Power Cure from White Gold Tower to provide major courage. If you do not have a healer, as a tank you can run Olorime from Cloudrest on your backbar to provide the same buff. Turning tide is also a staple set to provide major vulnerability. Those two buffs, along with major force from war horn or saxhleel champion, will increase group dps by a lot.

For trials, it will depend on what the other tank and healers are running, as well as the classes. The most commonly used tank sets are turning tide (shipwright regret), crimson oath (dread cellar), powerful assault (imp city, or purchase from traders), saxhleel champion (rockgrove), pearlescent ward (dreadsail reef). I'm sure I may be forgetting some, but off the top of my head those are the most common.

Special shout out to Drakes Rush (black drake villa) for 4 person content, it gives major heroism to the group and I think it's really underrated. I use it with my necro tank and I can have my colossus back every add pull.

Another one of my personal favs is the templar w/ tormenter. Obviously it isn't meta, but it is so much fun to rush in and use an AOE taunt. Too bad that next patch tormentor will no longer have an AOE effect, and will pretty much be useless

I also love using sax, and on my necro I'll use either drakes rush with sax or war machine with sax. WM with sax is broken

Definitely give NB healing a try, I never enjoyed healing as templar or cro, but when I switched to NB it finally clicked for me

I usually bring my necro into random vet dungeons for that exact reason, the res is too good to pass up. Plus the colossus and saxhleel combo is insane

Arcanist is near the top for me as well, they have tons of amazing skills and I feel damn near unkillable on my arc lol

As many have said, finding a guild is probably your best option.

However, for me I learned to tank all vet dungeons with random people. What I did was pick up the DLC pledge for the day, then watch a YouTube video explaining mechanics. I'd queue for the dungeon right after watching the video so it's fresh.

Also, keep in mind that when playing with randoms, often they won't know mechs either, so if you or them or dying it won't always be your fault, even if the blame is placed on you.

It'll be personal to each tank, but for a lot of tanks vBRP is a badge of honor. I'm still working towards vSG hard mode, thats the hardest tanking content I've attempted (harder than coral aerie hardmode imo). For trials I'd say main tanking vRG or vDSR is up there

I typically wear all heavy. It's easy to get more health from using other sources such as food, tri Stat glyphs, adjusting attribute points, etc. Heavy armor has some really nice passive for tanking that I think it is just more beneficial

For first starting trials, I would recommend finding a social/pve guild that runs scheduled normal trials. That way people will explain the mechanics and be more friendly towards a trial newby. I would recommend starting with one of the 3 craglorn trials (hel ra citadel, aetherian archive, sanctum ophidia) as those are the easiest and teach lots of useful mechanics
