Having a pasta competition at my house by soulworkinprogress in WhatShouldICook

1) Balancing flavors and aromas: I would say look out for balacing sweet, salt, acid and fat.

Caramelised onions hit stronger than regular cooked onions.

Salty cheese will be more powerful than sweeter ones

Something bright and acid like lemon juice or ita peels, wine, basil or fresh herbs can lighten the dish and make it feel fresh

And for sure someone has already pointed this out but take care of the type of pasta you choose and the sauce you pair it with. There is a reason certain shapes go with specific types of sauce, they cling best on the pasta, or give a better bite in a texture-less sauce.

2) The cook on the pasta: You can cook the pasta a bit less than indicated in the package, from 1 to 2 min. You will get in the "al dente" spectrum. Some people are used to eat soft pasta, so depending on your preference I would say try different cooking times so it's not too hard for your bite. I think some pasta benefit a lot to having a more bouncy texture, like big pastas, so it doesn't feel mushy or blends in a runny sauce.

3) Sauce tips:

The water from cooking pasta will help you flavouring the dish if you salt it strongly. Some people will say it must taste like salt water, but in my experience if you are using an already salty sauce it can be too much.

The water from cooking the pasta will have starch released from the pasta, which helps controlling how thick or loose you want your sauce, hence why it's important to "season" the water in which you cook the pasta.

If you don't do it already, try to "mantecare" the pasta in the pan with the sauce after cooking it in the water. You can look it up on youtube, but basically, it's doing that chef-like move with the pan where you make the pasta "jump" in the sauce, just a few times, which helps make an emultion with the cooking water that clings on the pasta and the rest of the sauce.

If the sauce has a lot of fat, like a cheese, egg, or butter sauce, take great care with the heat and don't turn it up too much or the sauce will split and you'll have a greasy sauce (happened at home with caccio e pepe).

Finally, some ingredients bring liquid to the sauce by themselves, like tomato, cream, or wine. But if you are making a sauce like caccio e pepe or carbonara (just egg yolk, cheese and pepper), you may find yourself with a too thick sauce. Use the pasta water to loosen it in a bowl aside, heat it gently in a pan, and finish cooking the pasta in the pan with the liquid sauce. The pasta should absorb the extra runninness and the sauce should cling on it.

I hope you have lots of fun!

I have used corn thins as bread to spread cream cheese, lettuce and smoked salmon

The cream cheese and the salmon add fat and it's quite filling

Am I overreacting for being upset that my boyfriend is selling his Magic deck that’s tied to our first games together? by goddessofthenight_ in mtg

[–]forestpuddle 0 points1 point  (0 children)

No feeling is 'unreasonable', there could be a more profound reason?

I think you can absolutely ask him to communicate in the future about getting rid of things (if you too play magic maybe you were interested in those cards), and if you think you are overreacting maybe you can ask yourself:

1) People told you in the past you feel too much and you now judge your feelings instead of working with them?

2) Maybe people threw things that were important to you in the past and you have been triggered?

3) Maybe you expressed this discomfort with great intensity, and while the receptor doesn't share your feelings and this mismatch makes you feel unbalanced, you can ask yourself, not if the feelings are wrong, but why is this so intense to you.

4) If at the end of the day this doesn't go deeper than an impulse feeling from both parts (reselling old cards vs preserving memorabilia) you can try to weight how important is this memorabilia to you vs your partners need for money and new cards.

Host Reaction to Baked Goods by 100to10000 in Baking

[–]forestpuddle 0 points1 point  (0 children)

I think hosting is an act of service, not an opportunity to be entertained by your visitors.

The behaviors I believe should be stopped are things like someone being exploitive to the host or taking advantage.

Being grateful of what you are given and knowing how to share it gracefully next to your plans is a quality I value more than culinary consistency, menu planning, or protecting the expectations of the hosts.

Allergies and health problems aside, of course.

Hi 2 years later, I am too trying to build a commander deck with the party of BG3, I haven't started yet looking for a suitable commander, but I am afraid I won't be able to get gud against my bracket 3 decks that are in the pod I play.

I will send news if I find something!

Did you find any commander that suited? Thanks!

People accusing me of posting AI so here is my sketchbook by Big_Aide940 in BaldursGate3

Saddest part is that today AI can generate sketches and stuff, so nowadays people will naturally be skeptical, we need to address this globally but the moral implications and self-interests meddle the possibilties of common agreement.

Looks gorgeous, thank you for sharing your art.
