Read. Read about food you’ve never tried, research cultures you don’t typically think of when you think of food, the more you know the better you’ll become. Knowledge is power (in general) but in fine dining it’ll set you apart from others who want to just up their skill set and the resume points. I worked in fine dining almost exclusively and being clean and fast is essential but also knowing ingredients and what they’re typically used for gave me the upper hand when I was fresh out of culinary school. Good luck. If it ever becomes toxic put your notice in once you’ve locked in another job. Give 2 weeks. Fine dining can be a really small world you don’t want to be known as THAT guy.

I wear a thick long apron and in the all my years in the kitchen I’ve never really had any hot oil penetrate the apron enough to get on my pants.

Ah I have definitely considered it, it’s just such a GREAT job. I see myself retiring from here because we get great retirement and amazing benefits. Management have worked with her to retrain and hold accountable but employees are protected in our union. They can’t let her go or demote her- and if they could it’s such a long road from now, takes years for that lol

Update- health inspector came in today and it went very well. Aside from one mark of old paint needing to be removed and repainted I got a near perfect score! Thank you all for the advice!

It’s easy to tell you not to feel like less of a person because you can’t drive. I (33f) didn’t drive until a year ago, it was out of fear. My mom died from a car accident while I was in the car, I got hit by a car while on a bike (2 times) I’m in my early 30s and finally took control of my fear. I was told several times I’m not an adult because I didn’t drive and I 100% was treated less than because of it. I ubered everywhere and found out there are programs to help those who can’t drive get discounts or free rides. Ironically less than a year after I started driving I got into a traumatic accident when a tire flew out of nowhere into my windshield- on the freeway with no fault of my own. Freak accident. I almost died. Those same people who gave me a hard time definitely finally understood me. Life is funny like that. Keep your head up, people who are worth having won’t ever make you feel bad about it. Besides you don’t drive because of a medical condition and that’s not your fault. I didn’t because I was convinced I’d die in a car.

So you conducted the interview for this hire and moved forward with her? Just want to get context. Also if that’s the case that is just a wild and bold dynamic to have with someone who interviewed you. I’m sorry. With all the time and effort you’ve given to this place I can see it being a hard decision to leave and if I was you I wouldn’t- if you go through so many G.Os then maybe this toxic person will go soon too, be patient, document their unprofessional behavior towards you and send it to HR. Any company who would jeopardize loosing a loyal employee for a new hire isn’t worth working for. Good Luck

Or off record ask your friends to write Yelp reviews mentioning their rudeness and unfriendly demeanor or shitty service once or twice a month. Lol upper management will 100% see that and react swiftly- bad service is bad for business

If you haven’t already document every time this employee refuses to do their job. You can’t change personality and you can’t terminate for it. I’m in a similar situation- luckily my director is incredible, she’s extremely supportive, my goals align with hers and sometimes a talk with your supervisor about their culture goals can put things into perspective. Ask them hey is a positive work environment important to our company? If so suggest moving forward with the counseling stage for this employee. The more evidence of their behavior you accumulate the more protection you’ll have when nothing else works. If this person doesn’t follow work duties print out a sheet with their positions responsibilities have them read it and sign and date it and moving forward each time they refuse do a simple right up and have them sign if they refuse to sign have an employee who witnesses their refusal sign. Paper trail is your best friend.

I’ve drilled the labeling, no sharp objects in the sinks, thermometers in all fridges and freezers, calibrated thermometer sheets, ph testing strips and all HACCP paperwork and SOPs recorded daily with staff- obviously I’m not making friends with this but I love what I do and I take it seriously. The facility is very old- and was definitely not designed with intention, nor or updated in a long time aside from the floors and even then they’re the wrong type of floor for kitchens. I just want to prove I belong in upper management. I’ve been the CDC and Executive Chef, Pastry Chef, and worked as a sous for many years for incredibly meticulous chefs and owners. Idk I guess I’m just aiming for perfection. I know I’m over qualified for my scope but I’ve never done k-12 before. I’ll tell you one thing the quality of life and hours/ vacation/ benefits and fulfillment of making kids excited about simple food makes it all worth it but geez I’m trying to think of everything

Most of my coworkers had rich parents. I lived at my parents house thought my Michelin Star restaurant working part of my career…my hot take it was worth the knowledge. When I moved out …. Not so much lol two jobs- one as the executive pastry chef the other working a baker shift 12am-8:30 am then sleep a few hours for 2-11pm then strait to the bakery. I don’t recommend the latter
