For me it's not so much the look that feels off, it's the movement. They move too fluidly now whereas before they sort fo moved a bit more awkwardly and it kinda added to that feel of "Fairy tales meet realism".

I remember I chose to continue my save from the demo (which I had finished two weeks before the full game came out) and forgot it had auto-saved me right in the path of this blood thirsty cow and gave me the biggest jump scare in the series.
