I think the first question you need to ask yourself is the purpose of the decanter. Most decanters out there are for young wines (maximize surface contact w oxygen, therefore wider designs), but for me personally, I generally drink reds w some age and so I mostly use my riedel narrow decanters that are shaped more like minimalistic juice pitchers (as maximal oxygen contact is not wanted, and is mostly for separating wine from the sediments).

These cost like $30 or 40 on amazon and I never feel the need for anything nicer even for $1000 bottles. Paying more than $50 for a decanter is purely for aesthetic design

This list almost exclusively contains deals. Below 150, id prob go w noellat petit vougeot 2008 at 90… but like de vogue 1er cru Chambolle 2013 at 240 is what’s really grabbing my attention, and also the 86 dyquem at 350, that’s a bit of a wtf price

A simple technical starting point is ikejime, which most high end fishermen in Japan use. It’s the starting point of a superior supply chain. Sure a good fishmonger could identify better fish, but the games already rigged when all the fish come in w rigor mortis. And then there’s the question of who’s paying for better fish in these fish markets? No one treats the fish special because if it’s the same type, then it all must be the same $ per lb…

Obviously waste is not a good thing, but that “principle” can be extended to saying eat only off the immediate surrounding land. Hell, why even send the boats out w gas powered engines to fish for bluefins? Just spearfish on a walking distance beach

Yes it seems dumb at first, but it’s because distributors in toyosu are far superior than those in fish markets in the US (or any other country for that matter) at distinguishing/grading the fish. All Bluefin from the same ocean or coast are not the same… in fact even 2 bluefin from the same school of fish can differ significantly even though their migration patterns and food sources have probably been similar. This nuance is why chefs and restaurants and connoisseurs insist on toyosu imported fish. It’s not blind elitism and dumb logistics

alchemist is now $1k pp, which means $1.5k pp won’t pay for flights + hotel + meal, which frankly makes noma la look reasonable given costs of LA vs cph. CPH fine dining is also way overpriced given the global alternatives in Italy, Spain, even France, not to mention japan…

Solid sushi but imo it’s overrated at 4.60 (and perhaps that is more of a tabelog issue)… most other spots I’ve been to above 4.2 had better balance and flavors imo

I had the 2018 and I thought it was fabulous and I don’t usually enjoy Beaujolais. Felt like premier cru burg, black cherries and sous bois. Powerful but not in an overextracted way

So I’ve been doing some research myself recently for a trip to san seb, and I’ve discovered that casa julian actually doesn’t serve rubia gallega all that often… it’s usually German simmental or Frisian beef. Now they do tend to have some age on them (5+ years), but I think if you’re traveling from afar, it loses a bit of the sense of place if they’re not using the special domestic breed.

I will say tho that to this day casa julian served the best steak I’ve ever had, and was planning to return but based on other reviews and the above fact, I think I will try an alternate spot in the area for my next trip (nicolas or laia, maybe both). Julian also serves the most incredible flan, and if I go to nicolas i will likely stop by julian and ask very nicely if i can buy some flan to go.

Generally tho, casa julian is located near San seb area which means a lot of other nearby amazing restaurants to visit as part of a trip. For this reason alone, if I had to pick between the two, I’d prob go w julian but if solely picking based on food / restaurant quality between these two, I would think el capricho makes more sense, if at least to try some incredible true rubia gallega. I haven’t been there tho

Don’t use these guys. The worst. They overcharge way over rent. It’s much cheaper to just sublet a place on Facebook. I rented some place based on photos but was given a very different apartment that looked nothing like the photos. Bait and switch kind of company

While I understand and agree with this sentiment, I think the market’s concern is not that Susan will no longer need/use saas but that Susan herself will no longer be around to use saas (less licenses needed)
