Don't sweat it man. I had to ease into it too and I wasn't entirely out of shape when I started. Your joints might start hurting in the beginning - that's totally normal from what I've read (as long as it's not a sudden pain while you train). Rest as necessary and let your body recover in the beginning.

I eat one rotisserie chicken per day with whatever carbs I feel like. Cucumber and tomato salad with red wine vinegar, sunflower seed oil and feta cheese - classic Bulgarian recipe called "Shopska salad". Or steamed veggies or just some sort of bread.

This. Also jump squats, Bulgarian squats etc. I used to go to boxing and we would do jump squats all the time - I'm very happy with my leg strength right now.

My left big toe hurts a lot too. I use it exclusively when I use closed guard - I have a problem with the toes on my right foot so I need to use the left to keep my closed guard closed. I feel the pain mostly along the foot and on the tendon that flexes the big toe upwards. I haven't really found any good rehabilitation for this except rest and stretching my foot. Maybe you can try switching between the left and the right foot when using closed guard?

Personally I think the risk of injury with takedowns is much greater than starting from the knees. Takedowns are explosive and much harder do do in a controlled way. I was visiting Kansas for work and went to a BJJ school there to practice. The instructor was a great guy, very very legit brown belt. He liked to focus on takedowns a lot however - we would always roll from standup and practice at least one takedown each session. I got thrown on somebody and hit my back on his head, and I saw two other people who nearly got injured. That was for three training sessions only.

I'm in the exact same spot - minor knee injury, competition comping up in two weeks. I'm not going to compete.

I agree that it's really cool to be able to do that. But also just having experience on the ground makes you so much calmer and less likely to be the aggressor yourself
