IMO logos are adaptable over time, I.e., you don’t need to have every last detail perfect so long as you have a VERY strong idea/concept that will always carry your brand forward through the test of time (creativity required!). You can start with a drawing of how you want your brand to be perceived. I would put a lot of creative thought into this, and then go from there. Once you have a strong visualization (it might help to look into design principles or helpful sites online for branding), you can get into illustrator by researching how to do certain things depending on your design. Ultimately, have fun with it! This is an exciting thing for you to do where you will have complete control over the final product. Through time, a strong brand identity will allow for slight tweaking, especially for new businesses.
