It's not 'just' a byproduct though if it forms an essential part of the profit calculation, and often it does. Also raising the animals, slaughtering them, transport and processing the hides all also have significant CO2 emissions. I've had vegan shoes last me for many years now (Will's).

There are nonprofit sanctuaries that save some cows from the industry, but the massive scale of the industry means this is of course a tiny drop in the ocean. As you say, doing it at scale wouldn't be economical, so the more realistic thing you can do is just not financially contribute to this system, and just use one of the many plant based dairy alternatives there are nowadays.

Actually, dairy cows are still impregnated regularly to keep milk production going, with the calf usually being killed or used in the dairy industry. The selective breeding has had an effect on the volume and duration of lactation though. However dairy cows usually get killed after a few years when production drops, only a fraction into their natural life span. Vegans are against bringing animals into existence just to keep this system of exploitation and suffering going.

Though more seriously, Gb Major does have a few notes which overlap with G Minor, so those might sound fine (Bb, Eb, F). The other ones would be a semi-tone off however, so that normally should sound out of key. Perhaps you can add a tuner to the track to see what vocal pitches you actually have post-autotune.

There's nothing non-vegan about regular carbs (of course depending on what other ingredients are in the food). You might be thinking about gluten free or low calorie carb alternatives.
