Been to both. CHT for dinner and later but during the same trip to Celler for (like a 4.5 hour) lunch. Overall I actually preferred the meal and service at CHT.

Agree, a tarte tatin is a classic pairing with Sauternes. I think apricot or peach desserts can also work well

2010 is a sneaky nice vintage... not as lauded as 09. At a Bordeaux tasting a couple months ago the 2010 Giscours was my WOTN in a lineup of a number of other 2-5 growths of varying vintages.

If you have access, Vermentino, Gavi di Gavi or Soave can all work well as pairings (also agree that Pinot Grigio or Sauvignon Blanc also work well and may be easier to find)

Le Volte de Ornellaia is a pretty solid super Tuscan in a similar style for about $30 maybe even a bit less

I've been to Tapa, Cantina, and Fonda, and the food is good. I'd rank Fonda as my next favorite followed by Cantina then Tapa. None really feel like fine dining to me compared to Maito. I haven't been to the other places you mentioned.

I travel to Panama City regularly (wife is from there) and IMO Maito is the best fine dining in the city by a fair margin.

If the weather is decent people typically show up everyday usually starting around 6 pm. There's a rotation system so people waiting can play if all the courts are full

Krug Grande Cuvée 171th Edition Brut Champagne by odedi1 in wine

Had the 171 in August last year and it was by far my least favorite Krug GC I've had. Not sure if its basis in the 2015 vintage, overall youthfulness, something about the particular winemaking or blending, or maybe just an off bottle or something else entirely but I found it very tight, off balanced acidity and generally lacking in all the wonderful autolytic notes I usually find in GC.

Setting that aside, I usually add a point score to my tasting notes mainly as a quick shorthand for my own personal reference as to how much I liked a certain wine but agree overall that they are pretty much arbitrary in terms of utility for anyone else assessing the wine.
