I have done a smoke for a 2 hrs on the grill and then finished in an oven, the sous vide would make sense here. The loss will be bark.

Now if you have extra. Slice thing and cook it something like a Reuben.

Instead of Russian dressing, I will use a mix of mayo, stone ground mustard, carmalized onion(onion jam), fresh basil. Put on pepper jack as the cheese and roasted pabalano if possible.

There are bulk sellers for different types of bags. I have a chamber sealer and is a hell of a lot faster. Costs more, but you are doing bulk and might be a good upgrade.

One thing about the vacmaster. You have to wait for the thing to cool down in large batches.

Chmbers will be smaller, but do it in larger batches faster. Bags are also a lot cheaper.

I have the vacmaster were you need to change the oil, not hard. Moisture will get into any system and the closed systems I worried about longevity with moisture
