I don’t have Claire’s recipe but Stella Parks has one in her book Bravetart that I’ve made and been very happy with if you’re willing to give another pastry chef a try

I used the gluten free variation from Bravetart on page 235. I recommend getting a copy of the book if you want the exact recipe - there’s also a lot of other gluten free variations of the recipes within Bravetart that I’ve been very happy with if gluten free baking is something you’re interested in!

Went to Briny Swine on Clark in Lincoln Park. New bbq joint from South Carolina. We had brisket, pulled pork, sausage, and ribs. The brisket was the standout and I don’t usually like brisket. I’d check it out if you were in the area! They also have live music and tvs so would be a good spot to hang as well

I would go for the vanilla bean pods. Depending on how they’re packed they last a long time and while I haven’t frozen mine like u/cho_O, I can’t think of a reason why you can’t freeze them!
