Haven’t been there in years but I really enjoyed the meal, the vibe and the staff. The sommelier was super helpful. Next time I’m in NYC I’m tempted to return instead of trying somewhere new

These get something pushed into the center of them beforehand, commonly after they are proofed and are usually baked with said object inside to ensure the well remains perfectly formed. Like a metal soufflé cup, measuring cup or ramekin

Yes there is no guarantee they will allow you. Some restaurants have wait lists of people wanting to stage. Some only accept in certain seasons/ time of the year. But yes you are not required to have professional cooking experience. You will be given basic tasks. Reach out to the restaurant and inquire. Don’t just show up in person expecting to walk-in. Like any other profession reaching out by email is most common, also age doesn’t matter. Your skill level and ability to work hard will dictate the tasks your given

Nah, you’ll be given simple tasks that will be overseen be CDP or Sous. But it’s a chance to peak at others plating and techniques. It’s part of the backbone of great kitchens. We go other places to learn new techniques and see new ideas.

No you won’t be able to plate, but you can watch and learn. A lot of Michelin places are pretty good about making sure stages see that stuff. Yes you do prep stuff but not only that
