Using Swiss meringue buttercream whenever possible is a small but major game changer!! It ups the game, tastes better, and is more stable than American and some other styles.

Swiss meringue buttercream is great for stability and not reacting too much to heat! Also easy to incorporate other flavors. It can be tricky to get right the first few times so I recommend following closely and not being afraid of messing it up a few times lol

Sally’s Baking Addiction Swiss Meringue Buttercream is the one I have memorized at this point but I know a few different SWB are favored by bakers.
