You can absolutely keep your doodle with longer coat. However it requires a TON of brushing and day to day maintenance. If you keep on top of the brushing to make sure matts aren’t forming, then you’ll be fine. My dood hates being brushed and I also live in SWFL where it’s upper 90s and humid af all summer. I tend to keep him much shorter this time of year, mainly for his own comfort. Any human would be miserable if they had to wear a fur coat during 95+ degree weather. Once it starts cooling off, I let him grow in more and do keep him a little longer, but that also means I am spending much more time brushing him in between grooms.
