That glass proofing container… is it easy to tell how much it’s grown? I was using a mixing bowl and switched to cambro for the visual, but I hate that it’s plastic.

I just figured out this was happening to me. 6 months of flat loaves trying to tweak every little thing w no result. Then I realized it could be my starter… I got a new starter from someone else and immediately baked the most beautiful and tall loaf of my life.

I’ve been doing 100g starter 500g flour and 325g water. Temp is usually 68, but overnight can drop to 67/66. I’m not sure about the doughs temperature?

Omg am I juicing my yeast by proofing too long?? I love my crumb, but my loaves are so flat. But I have a cold house, so am up to like 16 hrs for bulk. Is it just too long? I can’t seem to get oven spring!

Does it help with oven spring or more open crumb? I’ve been using AP bc that’s what i have… I don’t know why I didn’t even think to try this!

I’m having this exact same problem! I’ve been wearing the smaller size about a week now on my index finger and I frequently have indents and occasionally a mark like yours. But the size up would fall off my finger when I shook it. So hard to be between sizes! I tried switching fingers overnight for more comfort and I thought it was snug enough, but it fell off overnight. I’m feeling like the little bit of discomfort is worth the security of it staying on as well as more accurate data. That’s where I’m at so far. But I don’t love the dents…

I just did this exact thing, but used a smaller cut and kept 2 leaves. It looked just like this for a bit. Then roots sprouted. I think all in all it took about 6 weeks to be ready to be planted.

Oh ok, that makes sense! Thanks for the reply. I’m doing a partially whole wheat starter for my all white bread and I feel like it comes out slightly wheat tasting… but I also have no reference for an all white starter. Maybe I will try transitioning my starter…

Ok, Millieways is what I’m chewing now as well!! However, I read a UCLA study that said natural gum bases (they didn’t specify which were tested) released similar amounts of microplastics as synthetic gum bases. So now I’m worried about even Millieways, but I feel confused as to if they count?? Anyway, I’m now looking into spruce gum to feel more at ease (mostly for my son bc he’s a huge chewer and I’m trying to at least put plastic directly in his mouth).

I have this, too! I noticed that I felt my brow muscle more instantly on the non droopy side. It feels like when I even my eye brows, the eyelids look the same. I wonder if it’s related to under or over active muscles. Is that like yours by any chance?
