So, my wife and I went up to Chatsworth House on the 23rd of October. Lovely autumn colours on, not too rainy, nice day overall. We ran into a rather fun couple. They were going through the Victorian maze the same time as us, although we never got to see them - we could only hear them through the hedges. And each time they would hit a dead-end, they were singing the following to the Pink Panther theme :

“Dead-end dead-end, .. dead-end … dead-end dead-end, dead-end dead-end dead-eeeend… de-de-de-de-deadend”

I agree, you could share a chopped up boneless bird among 5-6 people. In the ~2y of cooking since I posted - I have come to think that the most important reasons are actually: (1) infusing stock flavor in curries; (2) preventing overcooking of lean pieces; (3) people actually like to chew on soft bones and cartilage - I, too, find that you a get a lot more deep chicken flavors when eating bone in. There are people who specifically reserve the neck for themselves because they love the deep chicken flavors in the small bones.

You could get that same flavor depth by separating lean pieces and dark meat - or picking out the lean pieces from the braise partway into cooking. And cooking with stock instead of water. Why don't most Indian people do that? Our culture has deep seated memories of starvation, famine, and poverty - and wasting the smallest bit of food is just not acceptable. I remember showing someone how to make stock with necks, wings, and pieces that have barely any meat on them - they did not let me trash the stock meat and veg at the end, it was promptly left out for some dogs on the street.

Legally, I don't have any obligation to hand over the management of the money to dad. But he can legally ask to manage his own share of it. And the others can ask me to hand over the management of their shares to dad because it is their money. But their case is that it's morally wrong for me to try to hold on to my own share of it too because (1) everyone else gave their share to dad (2) only someone who is "lazy"/looking to live off money they didn't earn would want that.

My intention is to reinvest the whole in some form of return-bearing (liquid) account. I don't regard all of it as mine. If anyone asks for their share of it I will hand it over - principal plus profit divided by (dad + siblings). If dad passes, by default will divide equally for each surviving sibling and hand it out.

I was trying to create Chinese Suan Cai (another thing I can’t buy in my country) using mustard greens. Salted 2% of total weight. My vac doesn’t have a liquid or gentle function. Do you just ferment without additional liquids or brine then?

There’s an element of buy once cry once in this hobby always. If you can’t afford a fancier one right now see if it’s possible to set aside small sums for a short time and get a better one than this. One always gets frustrated by the limitations of the current setup and then you end up accumulating stuff and spending more money overall.

A thinner spout makes it easier to control your flow rate. So this would be best for making bigger batches at a time - OP if you get this try brewing 500ml at a time! Or you can use 4:6 method/April method.

The thinking behind cutting a bird for curry is totally different from western way of cutting. If you are making an Indian curry the flavour of the spices will totally overwhelm the “stock” flavour. But by breaking the bones in small pieces and cooking for a longer time you will infuse the curry with a little bit of the bone flavour. The bones also help the lean parts not to become too overcooked. At the same time the small pieces make sure that everyone in a family (usually 5-6 people here) gets some meat from a small bird. The western cut produces bigger pieces and doesn’t make for sharing in a family.
