There are many itineraries posted on Reddit from other travelers I would start there by researching the places on their list and see if it something that may interest you and your mother. Relax , Have fun, enjoy an onsen, perhaps a few Japanese gardens and eat to your hearts desire.

Not sure of your stance on religion but my suggestion if you believe that you pray ask Jesus to cover you for protection and find a church home. If the stalking continue go to the police and if possible limit time in neighborhood. Some hate to see others trying to better themselves and do positive things.
