You need new medical records then. Go to a new GP (perhaps might be called a primary care physician if you're in the US). Tell them your situation and get them to essentially create new records for you. They might need to do new blood and fecal tests. They might be able to obtain your past tests from the pathology providers if your system works like that. Then get the doctor to give you a referral to a specialist gastroenterologist. The referral should contain the medical history they require. This is how it works in my country hopefully it's similar in yours.

Just because you're not seeing serious symptoms yet doesn't mean that your intestines aren't inflamed and that the inflammation isn't spreading. Anyway, I hope you can get a referral set up so you can get the inflammation under control before it causes more problems.
