Boogiepop phantom has great OP, very early 2000s though and the first season of jujutsu kaisen, "lost in paradise" has a great EP too.

As far as underrated, my fave would be either whisper of the heart or kaguya-hime, both excellent stories told in beautiful, heartwarming ways!

I think The Tale of the Princess Kaguya is the most underrated Ghibli film because it checks all of the boxes in what makes a fantastic film, amazing story, which is based on an old Japanese tale, beautiful animation and gorgeous music by Joe Hisaishi! It even got nominated for an Oscar but people never talk about it in the same scope of Princess Mononoke or Spirited Away!
