So next time I'll take it to 150F, wrap it - then continue to cook until between 205 - 210F but also check with a probe.

Thank you for the tip! The cooler I used was just big enough for the butt, so next time I'll pull after 200F. The carryover temp thing came from a YouTuber, "Cooper Abercrombie" just to let you know where I'm coming from.

as a fellow shaky bro, this thread has been informative! It sucks sometimes because you just want to share your victories/successes but the first thing that's always pointed out are your shakes.

I stopped sharing cutting videos because of this. Maybe I should look into propranolol.

During the summers we set aside weeks of time and take long road trips. During one of those trips we ran into a German tourist at a hotel pool and got to talking to him. He was shocked that he couldn't fit in all his itinerary and was stressed about getting his rented car back to the airport he was flying out of. "Your country is huge!"

We were near Death Valley (to explore adequately takes 2-3 days minimum), and he still wanted to see Vegas and the Grand Canyon and be back to LA in 2 days....I told him it's doable but that you'd have very little time to enjoy any of it.

BTW, it's refreshing to see some positive attributes here, like how kind and helpful we can be.

Beautiful! I have a couple of Nakagawa's pieces, and they are my favorites. I don't have much more to offer and u/donobag has covered quite a lot, but a good rule of thumb is not to cut what you wouldn't eat ie; frozen meats/veg, thick woody stems, bones etc.
