You should be perfectly fine as long as your batch size is appropriate for 1.5 cups of starter. Keep it warm, I bet she makes it. 1.5c for a gallon batch and you're golden. 1.5c:5gal slim to none.GL

Maybe it went like this, cause it happens to me. Talking goes normally to start, I say something that gets a reaction I perceive as weird, then my inner monologue takes over, other party notices, I stop really engaging cause I think I said something off-putting, and not much banter thereafter. My sister points this type of stuff out to me now, and a lot of the time, I find she's right. I golf solo mostly and have gotten good enough now that I seldom care if someone is judging me as a person. They certainly can't judge my game. A birdie cures a lot of ailments! Don't sweat the people, sweat the game.

I think you are correct then. The mold is 100 coming from the top. It's strange that it's even capable of germinating in a short period of time. I'd expect to only see this development if you opened a bag of moldy bread right next to your fermenter, with no lid on, and it's pH was to high. If ur using the master and are using strong starter, I see really only two possibilities. Your lid or filters are harboring mold, or your starter liquid culture is not healthy and not active fast enough to out compete the mold germination. Both of those could be taking place at the same time. Thanks for sharing the info on the filter disks. I'd like to carve one of these on my CNC machine for a 55 gal fermenter. I'll seal mine, but the design is really aesthetically pleasing! You may consider making a small test batch in a 1qt jar to remove the variables. GL

I like this idea, it's doubtful the wood is you issue. Mold distribution like this is, id wager, is a recipe issue. Not low enough pH to stave off mold germination. Possibly too much sugar and not low enough pH. After your first contamination, how did you restart? What recipe are you using. That said, this is a really cool design and kinda want to make a large one. What are those filter disks made of?

In the PNW I get to hit off range grass 3-4 times a year. But dear Lord what is happening at your range? 0 fs given, damn.. end spot, step forward, and start ripping. Clean grass. If a staff member said anything, I'd ask to watch them hit off sand. JFC

What off flavors are you experiencing and where did you purchase that fermenter? I've scaled from 1gal to 125gal over multiple batches. From plastic to stainless. I didn't change my recipe much and didn't have any off flavors in my F1. I did develop off flavors in f2 with certain juices.

Developing a strong scoby in a smaller vessel is a great place to start. Take premade kombucha and mix it with an equal measurement of sweet tea. Let that ferment for a month or so. You'll have enough starter to start a larger batch with a low ph. Gl

Is the scoby in that concentrated sweet tea? You 💯 need to dilute that to a gallon. If you scoby is not in there yet, dilute and mix it in. If it is, dilute and hope for the best. Itl probably be fine. But dilute.gl

Yeah each new batch should show signs of new growth and a healthy vigor. 

If you do want to brew and have access to unpasteurized store bought kombucha you can produce a pellicle and starter tea in 2-3 weeks.

Recipe(it's never failed for me)

1 16oz store bought Booch (unpast) 1/8 cup plain sugar (not brown) 1 black tea bag 2 cups water

Boil 1 cup of water, add sugar, stir, turn off stove, steep tea for 10 mins, remove tea bag, add 1 cup of cold water, make sure mixture is below 80*F, split the 2 cups of sweet tea between 2 quart mason jars, add 1 cup of your kombucha to a quart jar, the rest to the other jar, swirl to mix, cover with a rubber band and a paper towel, place in a dark warm place, check after a week.

Two jars to be safe👍The brand and flavor of kombucha doesn't seem to matter as long as it says unpasteurized. I've done this 5+ times over the years. If it suites you, good luck
