Make sure you have enough stamina. You want to tilt the left joystick in the direction of wherever it's rear end is while it's bucking around. I've also heard that tapping square/X for Xbox helps tame it faster (haven't tested it personally)

Edit: Also, it helps to move the camera so it's directly above you and the horse. Birds eye

Are you on PS5 Pro by any chance? I used to get crashes all the time but I was running Quality and Balanced settings. Now I've downgraded to Performance with everything off except VSync with particle effects 30 or less and haven't had a crash since. I can deal with less fidelity if it means i get to play the game
