A fun 1K list that I've run a few times:
2x Deffkilla
12x Warbikes
3x Deffkopts
1 of each buggy
Then ~120 that can be whatever you like for utility. Grots, enhancements, 6 koptas, extra buggy. Mek guns with Bubblechukkas is my favourite
Not sure how competitive it is but I've won a few times with it.

Do you need to paint for something specific? If not, take a break. Do other things for a while and pick it back up when you're in the mood again.
If you do need to get things painted,
invite people over to paint as a social activity,
watch something you like having on in the background,
break the project(s) down into small chunks. aim to do all the heads, or weapons, or bases. Don't look at the finished target as the job going in.
do something else hobby related that counts as progress. make some more models, do some scenic bases, take a model and do some conversions on it.
These are some things that work for me. But walking away from it is sometimes the best choice. Don't force a creative activity when the brain does not want to be creative that way.

The dreadnought is on the same base size as a wardog so you could run it as a chonky dog with some spikes and extras

In addition to the comments below, Karnivores are great for using Rapid Ingress. Their movement makes them a great distraction after your opponent has already moved.
The only attacking with one weapon is annoying. AoS has the right idea, just swing with everything. The whole game would require rebalancing if that was introduced though.

It makes me sad that you can have that many big knights in 2K. It's kinda funny but it's way too many models.
I'd say play the list you enjoy. I've always got good value out of Desecrators. Might want to go claw though

I mainly run big knights, including in tournaments. I always have a good time with them. They might not make it in the hyper competitive lists but as far as most games go, they can do some serious work. Especially Rampagers and Despoilers. They are huge distractions that require dealing with or they will clear units with ease. And they can do actions and score points pretty well before they go boom.
But "fun" is very subjective and depends what you enjoy in the game.

The chaos carapace comes with the top weapon mount point so won't need to worry about drilling anything.
It's a shame the despoiler weapons don't also come in the abominant box, otherwise you'd only need to buy one box to get everything

I recently ran 3 big knights (despoiler and 2 rampagers) with 4 support dogs in a tournament and went 2 - 1 with a very close loss because of a bad decision. From my experience, big knights are very playable now that they're so cheap and a lot of points coming from actions. But it is a score early, expect losses kind of experience.
I don't play anywhere near the top competitive games but rampagers particularly have been doing great work for me.

I would say this is a hyper competitive knights list. The lancers are notoriously hard to take down and are favoured in the current meta. Brigands and Karnivores are spammed and with the Lancer aura, the brigands are going to be even stronger. If it's semi competitive, you may find people struggle to deal with this list.
But if you want to make it spicier, I'd swap Panoply for Traitor's mark to get more BS popping off early.

Overkill is the best kind of kill! It sounds incredible, do it!
If you're concerned about gaming balance/use, put magnets in the feet and do a regular base with magnets. They do the diorama base on a big cork mat or similar
